Description

The soft and chewy texture of the brownie combined with the crunchy topping and creamy marshmallow center is a crowd pleaser.

Ingredients

  • 2 cups Sugar
  • 1 cup Unsalted Butter
  • 4 whole Eggs
  • 1 cup Flour
  • 6 Tablespoons Unsweetened Cocoa Powder
  • 2 teaspoons Pure Vanilla Extract
  • ½ teaspoons Salt
  • 1 jar Marshmallow Cream (7oz)
  • 2 cups Semisweet Chocolate Chips
  • 1 cup Creamy Peanut Butter
  • 3 cups Rice Crispy Cereal

Preparation

Preheat the oven to 350F.

Combine the sugar and butter in a large mixing bowl. Beat at high speed until creamy, scraping the bowl a few times. Add the eggs, beating until blended. Stir in the flour, cocoa powder, vanilla, and salt. Spoon into a buttered 9×13 baking dish. Bake for 25 minutes or until the edges pull away from the sides of the pan.

Cool in the pan on a wire rack. Once cooled, spread with the marshmallow creme.

Combine the chocolate chips and peanut butter in a saucepan. Cook over low heat until blended, stirring constantly. Remove from heat and stir in cereal. Spread over the prepared layers. Chill in refrigerator until set. Cut into bars. Store, covered in the refrigerator.

I made these last night and they turned out fabulous. I made them in a cupcake pan so my son could take them to school to share with his classmates. My kitchen was a disaster when I was done, but they are delicious! I substituted soy nut butter for the peanut butter due to allergies in his classroom. I’ll definitely make these again!
