Description

Yummy chocolate cake with Oreos in the middle, and frosted with a light in texture cream cheese frosting!

Ingredients

  • FOR THE CAKE:
  • 1 cup Buttermilk
  • 1 Tablespoon Vinegar
  • 2-½ cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • ½ cups Dutch Cocoa
  • ¼ teaspoons Salt
  • 2 cups Granulated Sugar
  • ¼ cups Shortening
  • 3 whole Eggs
  • ½ cups Boiling Water
  • 1 teaspoon Pure Vanilla Extract
  • FOR THE FROSTING:
  • 16 ounces, weight Cream Cheese, Room Temperature
  • 1 cup Butter, Softened
  • 7-½ cups Powdered Sugar
  • 1-½ Tablespoon Pure Vanilla Extract
  • ¼ cups Heavy Cream
  • 20 whole Oreos

Preparation

Preheat oven to 350°F.

Grease and flour two 9 inch round pans, and line the bottom with parchment.

In a measuring cup combine the buttermilk and vinegar, and set aside.

In a medium bowl mix the flour, baking soda, dutch cocoa, and salt and set aside.

In a large electric mixer bowl, cream the sugar and shortening until it looks crumb-like. Mix in one egg at a time, mixing well after each addition. Mix in the buttermilk mixture. Mix well. Slowly add in the dry ingredients and mix well on medium speed for about 30 seconds. Mix in the boiling water and vanilla. Mix well on medium speed for about 1 minute until smooth. Divide the batter equally into the two pans.

Bake for about 30 minutes (depends on the oven). When a toothpick comes out clean from the center of the cake, the cooking is complete. Remove the cakes from the oven. Leave the cake in the pans for 5-10 minutes, and then remove them from the pans to a wire rack. Cool completely.

Frosting:
Cream the cream cheese, and butter until light and fluffy. Add the powdered sugar, mix on low speed until a firm frosting consistency is achieved. Add in the remaining ingredients (except the Oreos) and mix on medium-high for 1-2 minutes, until it becomes like whipped topping.

Putting one of the cake layers on a plate, smooth some frosting on the top. Apply one even layer of cookies onto the frosting. Smother some frosting over the cookies, so it appears to have a smooth layer over the top of the cake. Set the other cake on top of the frosted cake. Frost a smooth crumb coat on the top and sides of the cake.

Refrigerate for about an hour to set the crumb coat. Finish frosting with the remaining frosting as desired.

Suggestion: Line the bottom of the cake with whole Oreos and crush some more Oreos on top. Garnish as desired.

@shugary sweets: At the time I had on hand the Hershey’s Special Dark Cocoa, which is their version of dutch processed. = ) Glad it turned out good! ♥

I am in the process of making this cake. I have baked quite a few cakes in my life, but I have made a mess with this icing. I should have used my cake-common-sense before icing this thing, but it is midnight so that’s my excuse! :) My first problem is that after I iced the bottom layer and put the Oreo layer on, I just thought the more Oreos I could squeeze on the better, right? No! Because by the time I had put more icing on that and then assembled the top layer on, I realized everything is moving around and not staying put! Oreos are sneaking out the side of the cake layers. So a word to the wise, more Oreos is NOT better! Right now I have the crumb coating on and the cake is setting in the fridge, as well as the icing. Maybe it would have helped to chill the icing a little bit before assembly. But I know it’s going to taste good! Presentation will be sloppy, but it will all come out the same in the end. ;)

I made this today for my husband’s birthday because our three daughters thought Daddy wanted chocolate cake, but I knew my husband isn’t a huge chocoholic. So, this was the compromise, and it was a huge success. My only complaint is that the frosting recipe made a TON! I have a lot left over, and now I must find something to use it. My twins have both said they want this for their birthday cake in September, so it is a keeper for sure.

My son chose this cake to bake for me for my birthday. It was awesome. He used dutch cocoa, but our cake didn’t turn out as dark…just wondering what brand of cocoa you used?
