This is a soft, chocolate cake-type cookie with a surprise ingredient: raisins! My handsome husband grew up eating these cookies and loves them! You can’t eat just one.
Cover the raisins with water and boil until water is gone. In the meantime, combine brown sugar and shortening. Add eggs and beat until fluffy. Add buttermilk, baking soda, baking powder, salt and vanilla. Blend well. Add flour and cocoa. Stir in raisins. If needed, add up to 1/2 cup additional flour. Bake 10–12 minutes at 375ºF. Cool and top with frosting.
For the frosting, combine the frosting ingredients in a bowl until smooth. Add additional milk for spreadable consistency, if needed.
