Description

These awesome chocolate cookies taste like a brownie bite. Pure heaven.

Ingredients

  • 3 cups Flour
  • ⅔ cups Unsweetened Cocoa Powder
  • ½ teaspoons Baking Soda
  • 1 cup Sugar
  • 1 cup Brown Sugar, Packed
  • 1 cup Butter, Softened
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 2 cups (12 Oz) Miniature Semisweet Chocolate Chips
  • 8 ounces, weight Miniature Marshmallows, Frozen

Preparation

Preheat the oven to 400 degrees. Keep the marshmallows in the freezer until you are ready to assemble. This is very important otherwise they will thaw too rapidly and you will have a huge mess.

In a medium bowl, combine the flour, cocoa and baking soda. Set aside. Combine the sugars in a large bowl. Add the butter to the sugars and blend. Add the eggs and vanilla and beat until light and fluffy.

Add the flour mixture to the sugar mixture. Add the chocolate chips, blending until combined. The dough will be very stiff. Gather 4-5 frozen marshmallows in the palm of your hand and cover them with heaping spoonful of dough. Wrap the dough around the marshmallows, completely encasing them and form in a 2-inch diameter dough ball.

Place the balls on an ungreased cookie sheet, 2 inches apart. Bake for 8-10 minutes. Cool on the pan for at least 2 minutes before transferring to a cooling rack.

Made these yesterday and they’re really fantastic. Very chewy and chocolaty. I made some of mine into ice cream sandwiches. These cookies with vanilla ice cream is sooo good. Thanks!

Tried this today. They taste very good. Only issue I had was that, I think I baked them for 10 mins instead of 8, and the marshmallows kind of melted and I didn’t see that cloud effect.

I gave these a 5 mitt salute b/c of the flavor. They are so moist. It’s like a cake/brownie consistancy. Very good.

The cookie batter is a complete mess and they are kind of difficult to make. In all honesty, I hoped they would be gross so I didn’t have to get my hands so yucky again. I tried chilling the dough and it didn’t really work. I agree the frozen marshmallos didn’t really make a difference. In order to ‘wrap’ my marshmallows, I used a lot of dough, so I only got 24 cookies, but in all fairness, they were the size of small cakes. :) Although a difficult dessert, they are really good!

These cookies were great! I’m not sure freezing the marshmallows made much of a difference for me. By the time I got the dough balls stuffed, the marshmallows had thawed by that time. They still baked up fantastic, though.

These are incredibly moist and chewy and full of chocolate flavor. I might try making them without the marshmallows next time just to see how the dough is on it’s own.

I also halved this recipe and it worked perfectly.

These cookies are awesome! Because I live in very hot and humid Hawai’i, I had to wash my hands in cold water every two cookies to keep the dough from sticking to my hands and making a mess – but the extra effort was well worth it. Thank you – I’ll definitely make these again!
