I made these today, omitting the eggs (egg allergy in our family) but subbing in instant potatoes with milk and Ener-G Egg Replacer powder (1 Tbsp). They’re wonderful!

I made this yesterday for a family get-together. Mostly because I have zucchini coming out of my ears right now.
It was DELICIOUS! No one could believe there was zucchini in it. Tastes just like a chocolate chip cookie but more moist. Fabulous recipe.

Very good! I told my 4 year old that they were brownies. She didn’t believe me at first, and was wary of the greenish flecks she saw, but she loved them! My baby ate them right up, too, as well as everyone at hubby’s office. Great recipe!

Absolutely yummy!
My batter was very stiff & took some spreading to get it even in the pan, but it turned out so well. Very moist.
I liked it so much that I turned around & made another batch to use up more zucchini. I had an apple on the counter so that got grated too! I added some cinnamon to the apple batch & with both of them I dusted them liberally with icing sugar (powdered sugar) before I baked them. That gave them a glistening, crackled look & a sweet little crunch as you bite into them.
Now I can’t decide which I like the best – I keep tasting one, then the other, but they are both really good.
