Description

My boys are allergic to nuts so most of my cookie recipes will exclude them, but you can certainly add 1/2 cup of chopped nuts to this recipe and it will be divine!

Also, these are still cookies that have fat in them, no other way around it. Yes, probably not as fattening as the standard cookie, but you must exercise discipline. Ya’ can’t eat 10 and still expect a weight loss on the scale!

Ingredients

  • 2 cups Whole Wheat Pastry Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1 cup Sucanat
  • 4 ounces, weight Light Cream Cheese, softened
  • ¼ cups Unsalted Butter, Softened
  • ¼ cups Coconut Oil
  • 1  Egg
  • 2 teaspoons Vanilla Extract
  • 1 cup Chcoolate Chips, Grain Sweetened

Preparation

1. Sift together flour, baking powder, and salt in a bowl. Set aside.
2. Beat sugar/sucanat, cream cheese, butter and coconut oil in the bowl of a stand mixer. Add egg and vanilla and mix to combine.
3. Add flour mixture 1/2 cup at a time until all combined.
4. Mix in chocolate chips.
5. Preheat oven to 350 degrees F. Line 2-3 baking sheets with parchment paper. Use a small ice cream scoop to uniformly scoop out the dough, flatten the ball a bit and arrange about an inch apart on the cookie sheets. Decorate as you like!
6. Bake for 12-15 minutes (mine were perfect at 15) until light golden brown.
