Description

Made from scratch chocolate chip cookie dough cupcakes. The secret is in the icing! Tastes just like chocolate chip cookie dough, but not too sweet! These things are to die for!

Ingredients

  • FOR THE CUPCAKES:
  • 1-½ cup Unsalted Butter, Softened
  • 1-½ cup Packed Light Brown Sugar
  • 4 whole Large Eggs
  • 2-¾ cups Cake Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Milk
  • 2 teaspoons Pure Vanilla Extract
  • 1 cup Semi-Sweet Chocolate Chips

  • FOR THE FROSTING:
  • 1-½ cup Unsalted Butter, Softened
  • ¾ cups Packed Light Brown Sugar
  • 3-½ cups Powdered Sugar
  • 1 cup All-purpose Flour
  • ¾ teaspoons Salt
  • 3 Tablespoons Milk
  • 2-½ teaspoons Pure Vanilla Extract
  • ½ cups Mini Chocolate Chips

Preparation

For the cupcakes:

Preheat oven to 350ºF. Line two cupcake pans with paper liners (24 total).

With a mixer, combine the butter and brown sugar. Beat together on medium-high speed until the butter/sugar mixture is light and fluffy (about 3 minutes). Mix in the eggs one at a time. Make sure to beat the mixture well after each egg addition. You want the eggs to be well incorporated. Remember to scrape down the sides of the bowl as needed.

Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir together to blend. Gradually add the dry ingredients to the butter/sugar batter at low speed alternating with the milk (beginning and ending with the dry ingredients). Blend in the vanilla and fold in the chocolate chips with a spatula.

Divide the batter evenly between the prepared cupcake liners. Bake for 18–20 minutes (or until a toothpick inserted in the center comes out clean/yields a dry crumb). Allow the cupcakes to cool in the pan for 5 minutes and then transfer to a wire rack to cool completely.

For the frosting:

Beat together the butter and brown sugar in a bowl on medium speed until creamy. Mix in the icing sugar until smooth. Beat in the flour and salt. Mix in the milk and vanilla extract until the icing is smooth and well blended.

Frost the cupcakes as desired. Sprinkle mini chocolate chips on the top of each cupcake.

I made these for my daughter’s dance team at college. The whole dance team loved them and she told me she had requests for more from the football team!! Wow! She said I needed to start baking right away. Some of the girls even texted me to say how great they were.

These is my new “birthday cupcake” recipe – it is fabulous! The cupcakes by themselves really taste like a choc. chip cookie in cake form, but it is the frosting that really makes them amazing. The brown sugar in the frosting adds great flavor. I make them for all birthdays now, adding a mini choc. chip cookie as a garnish – getting ready to make them for my son’s 3rd birthday party right now! :-)

Great Recipe! I followed the recipe exactly, but I didn’t fold in the chips. I was worried they’d fall to the bottom after reading that other comment, so I dropped in half the batter, added to chips to each one, then topped with the rest of the batter. No sinking chips!

I made these for my husband’s birthday last night and they were a HUGE hit. The cupcakes didn’t last through the night and I got many compliments on them. Will definitely be making this again (for the people that missed out).

Yummy. Rich. Moist. Lots of chocolate chip flavor. I will tweek this a little when I make them again. I used milk chocolate chips in the cupcake part and they sank to the bottom. Next time I will try the mini-chocolate chips instead. I would love to make these in a mini-cupcake version. If anyone out there can give me tips on how to do this please let me know. Thanks for a great keeper!
