Description

You have to try this one! This used to be a favorite at my cafe 9 years ago. My husband still gives me an extra nice kiss when I make it.

Ingredients

  • 1-½ cup Cream Cheese, Softened
  • 4 Tablespoons Double Cream
  • 1 cup Caster Sugar
  • ½ cups Cocoa Powder, Unsweetened
  • ½ teaspoons Ground Cinnamon
  • 3 whole Eggs
  • 5 ounces, weight Amaretti Or Crushed Graham Cracker Biscuits, Crushed
  • ⅓ cups Unsalted Butter
  • 1 bag Homemade Whipped Cream, For Piping Decoration
  • ½ cups Chocolate Shavings, For Decoration

Preparation

Preheat your oven to 350 F or 180 C.

Make the base by mixing the crushed biscuits with the melted butter. Press the mixture evenly over the bottom and sides of a 9-inch pie pan. Bake the base for 8 minutes and them remove to cool.

Leave the oven ON and put the a baking sheet inside to heat.

Now, beat the cheese and cream in a bowl until smooth. Beat in the sugar, cocoa and cinnamon until blended, then add the eggs, one at a time, beating just long enough for them to combine.
Pour the filling into the pie pan over the baked base and bake the whole thing on the already-hot baking sheet for 25 to 30 minutes. It should look set and not jiggly.

Remove and cool. The cheesecake will sink as it cools.

Once it is cool enough, pipe the sides with whipped cream and fill the middle with chocolate shavings (or curls, if you like).

You will NOT regret this one. Well, maybe a little. :)
