Description

This is a fun project in honor of Chinese New Year which is on the 23rd of January. Print off a sheet of “fortunes” in an Asian font to celebrate New Year’s Day or any other occasion. Or support your team or even pop the question on Valentine’s Day! See our related link for more ideas.

Ingredients

  • 1 whole Egg White
  • 3 Tablespoons Sugar
  • ¼ teaspoons Salt
  • 1 Tablespoon Melted Margarine
  • ⅛ teaspoons Vanilla
  • 1-¼ teaspoon Water
  • ¼ teaspoons Instant Ice Tea Mix
  • ¼ cups Flour

Preparation

Preheat oven to 350 F.

In a medium sized bowl, combine egg white, sugar and salt and use a whisk to mix it together. Whisk in melted margarine, vanilla, water and the ice tea mix. Stir in flour and mix well. Refrigerate batter for 30 minutes.

Grease several baking sheets and set them aside. Have your fortunes printed and cut and ready to go.

Drop 1 full teaspoon of batter onto a sheet and spread it into a 3” circle using the back of a wet teaspoon. Repeat the process making 1 or two more on the same sheet.

Bake the cookies 2-3 at a time at 350 F for 3-4 minutes until the center is set and the edges are starting to brown. Remove the sheet from the oven and lift the cookies gently with a spatula.

Lay the fortune just below the center of the cookie so that you can fold the cookie fully in half. Fold the folded cookie in half to form the traditional shape of a fortune cookie.

Continue with the remaining batter, making 2-3 cookies at a time.

TIPS: Have several baking sheets available so that you can put the batter on a cool sheet to work with. It IS important to only bake 2-3 at a time because they harden quickly and you need time to work with the fortune.

NOTE: I listed bake time at 3 minutes for this post but overall you will have about 1/2 an hour in the baking part of the project.
