Description

I wasn’t sure about these cookies after eating the first one, but after five, I really liked them!

Ingredients

  • ½ cups Butter, Softened
  • ½ cups Brown Sugar, Packed
  • ½ cups White Sugar
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Baking Powder
  • ⅛ teaspoons Salt
  • 1 cup Rolled Oats
  • 1 cup Corn Flakes Cereal, Crushed
  • 1-⅓ cup Flaked Coconut

Preparation

Preheat oven to 350 degrees.

In large bowl, cream butter and sugars together until smooth. Add egg and vanilla.

In another bowl, sift together the flour, baking soda, salt and baking powder. Add to the creamed mixture and stir.

Add oatmeal, cereal, and coconut. Mix until combined.

Drop by teaspoonfuls (one heaping teaspoon) onto a cookie sheet, about 2 inches apart. Make sure they’re just a teaspoonful. This cookie is supposed to be small.

Bake for 10 to 12 minutes or until light brown at the edges and on the bottom.

Yields 4 to 5 dozen small cookies (roughly bite-sized).
