Description

These bars are a staple I make every Christmas. I make a double batch so my family won’t get upset when I give the rest away!

Ingredients

  • FOR THE CRUST:
  • 1 cup All-purpose Flour
  • 1 cup Old Fashioned Oats
  • 1 cup Brown Sugar, Packed
  • 1 teaspoon Baking Soda
  • ½ cups Butter
  • _____
  • FOR THE FILLING:
  • 2 whole Eggs
  • 1 cup Brown Sugar, Light Pack
  • ½ teaspoons Vanilla Extract
  • 2 Tablespoons Flour
  • 1 teaspoon Baking Powder
  • 1 cup Maraschino Cherries, Drained And Coarsely Chopped
  • 1 cup Coconut
  • ½ cups Toasted Pecans
  • _____
  • FOR THE ICING:
  • 2 Tablespoons Butter
  • ½ teaspoons Vanilla Extract
  • 1-½ cup Powdered Sugar
  • 1 Tablespoon Milk

Preparation

Crust:
Combine the crust ingredients and mix until crumbly. Press into a 13×9 cake pan. Bake at 350 degrees for 10 minutes.

Filling:
Beat eggs, brown sugar, and extract together. Combine flour and baking powder, stir into the egg mixture. Mix well. Add the cherries and coconut and pecans. Spread evenly over the crust. Bake at 350 degrees for 25 minutes or until lightly browned. Cool.

Icing:
Combine the icing ingredients together (add some of the cherry juice for a pink color instead) and drizzle over the bars.

Makes 4 dozen, if you can keep your family from eating them all!
