Description

This delightful French dessert is amazingly easy, takes only 10 minutes of prep time, AND calls for simple ingredients. You’ll love it!

Ingredients

  • 4 whole Eggs, Separated
  • ⅔ cups Sugar, Divided
  • 6 Tablespoons All-purpose Flour
  • 2 teaspoons Vanilla Extract
  • 1 cup Heavy Cream
  • ½ teaspoons Salt
  • 1-½ pound Fresh Cherries, Pitted
  • ½ teaspoons Lemon Zest

Preparation

Preheat oven to 375˚F. Butter a large rectangular baking dish (or 6 smaller baking dishes).

Combine the egg yolks and 1/3 cup of the sugar in a large bowl. Whisk until ribbons form and add the flour, vanilla extract, and cream. Beat the mixture until completely blended.

In another bowl, beat the egg whites together with the salt until foamy, about one minute. Then add the beaten egg whites into the batter, mixing lightly until incorporated.

Preheat the prepared baking dish in the oven for 4 to 5 minutes.

In a medium bowl, stir together the cherries, the remaining 1/3-cup sugar and the lemon zest. Remove the baking dish from the oven, pour in the cherries and top with the batter. Bake until the clafoutis is set in the middle, 30 – 35 minutes (or considerably less for smaller baking dishes). Serve warm.

Serves 6 to 8.

Looks so yummy! I may try this with blackberries and see how it turns out. It will be blackberry picking time soon!

This was wonderful! Loved it! I think bookophile was right. Any fruit would be good. I am excited to try it with blackberries.

This recipe was so simple and the dessert was greatly enjoyed by all! I made some with cherries and some with strawberries, seems would work well with any fruit.
