Description

Classic French dessert. Yummy!

Ingredients

  • 1 Tablespoon Butter, Softened
  • 1 pound Fresh Cherries
  • 2 whole Large Egg
  • 1 whole Egg Yolk
  • 3-½ ounces, weight Sugar
  • 3-½ ounces, weight All-purpose Flour
  • 1 pinch Salt
  • 6 ounces, fluid Milk
  • 4 Tablespoons Heavy Whipping Cream
  • 1 teaspoon Vanilla Extract
  • Powdered Sugar, For Dusting

Preparation

1. Lightly grease a 10-inch quiche pan with butter. Scatter cherries in the pan and place on a cookie sheet.

2. Using electric mixer, whisk eggs, egg yolk and sugar until mixture has a pale yellow color.

3. Beat in sifted flour and salt. Then slowly beat in milk, cream and vanilla extract until a smooth batter forms.

4. Pour the batter into the dish. Preheat oven to 400ºF, bake for 45 minutes or until the top is golden brown and the batter is set.

5. Cool for at least 5 minutes. Serve warm, with powdered sugar on top.
