Description

Apple crumble with a twist!

Ingredients

  • FOR THE FILLING:
  • 1  Large Custard Apple
  • 1 Tablespoon Lemon Juice
  • ½ cups Granulated Sugar
  • 20 grams Unsalted Butter
  • 2 Tablespoons Plain Flour
  • 1 Tablespoon Honey
  • 1  Egg
  • 200 grams Greek-Style Yoghurt
  • 100 grams Cream Cheese
  • FOR THE CRUMBLE:
  • 220 grams Unsalted Butter
  • 2 cups Plain Flour
  • 2 teaspoons Chai Spice
  • ⅓ cups White Granulated Sugar
  • 1 teaspoon Vanilla Essence
  • 1  Egg
  • ½ cups Rolled Oats
  • 1 Tablespoon Sliced Almonds

Preparation

Preheat oven to 180ºC (355ºF). Grease a 25cm x 15cm casserole dish, and set aside.

Cut custard apple into quarters, scoop out the seeds, cut off the skin and dice the flesh. Place diced custard apple, lemon juice, granulated sugar, butter and plain flour into a saucepan over medium heat. Stir gently until sugar has melted and sauce has thickened. Remove from heat and set aside to cool slightly.

In a large mixing bowl, combine honey, egg, Greek style yoghurt and cream cheese with electric beaters until well combined and smooth. Pour custard apples into yoghurt mix, and combine gently with a spatula.

Pour into pre-prepared casserole dish, use a spatula to ensure custard apples are spread through the mix evenly. Set aside.

For the crumble, combine unsalted butter, plain flour, chai spice mix, granulated sugar and vanilla extract in a food processor. Blitz for a couple of seconds to combine.

Add egg to the food processor, blitz until well combined. Add rolled oats and 1almonds and blitz on low for roughly 10 seconds to chop them roughly.

Sprinkle crumble evenly across the top of custard apple mix. Place in the oven to bake for roughly 40 minutes, or until top of crumble is golden.
