A tasty, yummy cannoli filling that we also use as a topping on cake or pancakes, just like whipped cream.
Drain as much liquid from the ricotta cheese as you can.
Most recipes call for straining it overnight, but I don’t stress over it. I usually decide to make this on a whim or a Saturday morning to put on pancakes, so forget the overnight plans. Just get as much liquid out as you can and it will be fine.
Stir in all the rest until everything is smooth and silky.
Try not to eat it by the spoonful (but don’t feel guilty if you do—I don’t!).
Serve as a topping on cake or pancakes OR fill in your cannoli shells and ENJOY!
This fills about 8 cannoli shells.
