Description

Sweet and crunchy holiday snack mix!

Ingredients

  • 3 Tablespoons Vegetable Oil
  • ½ cups Popcorn Kernels
  • 3 cups Corn Chex Cereal
  • 10 ounces, weight Peppermint Baking Bits (I Used Andes)
  • 10 ounces, weight White Chocolate Chips
  • 10  Mini Candy Canes, Crushed (I Used The Food Processor)
  • ¼ cups Sprinkles (I Used Assorted Red, White And Pink)

Preparation

In a large pot, combine the vegetable oil and the popcorn and put a lid on it. Heat over medium heat and let it cook until the kernels are popping with a few seconds in between. Then remove the pan from the heat and empty the cooked popcorn into a large roaster or sheet pan. Add the Corn Chex cereal and toss with the popcorn. Set aside.

In a large bowl, combine the peppermint baking bits and the white chocolate and microwave about 90 seconds. Then remove the bowl from the microwave and whisk until smooth.

Pour the peppermint-white chocolate over the popcorn and Chex mixture and with clean hands, gently toss everything together to coat. Immediately sprinkle with the candy cane crumbs and dust with the sprinkles.

Spread the Candy Cane Chex Mix out on a pan to set up. This should take an hour or so. Store in an airtight container.
