Description

Crunchy butterscotch and peanut butter haystacks.

Ingredients

  • 11 ounces, weight Butterscotch Chips
  • ¾ cups Peanut Butter, Preferably Crunchy
  • 8-½ ounces, weight Chow Mein Noodles
  • 2-½ cups Miniature Marshmallows

Preparation

In a large bowl, microwave butterscotch chips in 30-second increments until melted (this should be about 2 minutes), stirring between each. Once melted, add peanut butter to the butterscotch chips, stirring to combine. Next, add the chow mein noodles and marshmallows into the peanut butter and butterscotch mixture, stirring from the bottom up until well coated. Finally, spoon haystacks onto waxed paper or (if you’re like me and ran out) a foil-lined cookie sheet. Makes 12 large haystacks.

I love these things! I’ve never added marshmallows though. I usually use peanuts instead. Yum, yum!

we make these, but instead of chow mein noodles, use shoe string potatoes. Try it…it’s really good to.

Thanks for posting this! I’ve lost my recipe copy and have been looking for a new one. These are one of my favorite holiday treats, a MUST if you like butterscotch.
