These cookies are flourless, made with a nutty almond butter, slightly sweet from the combination of sugar and brown sugar, with a rustic feel from the gluten-free oats. Add dark chocolate cocoa powder for a cookie that is gooey on the inside and crispy on the outside!

Rich, sweet, slightly salty cookies without heating up the oven.

2 cookies each serving? At my house it would take a dozen each for a serving!

I have tried a similar recipe before but instead of rolling in sugar I use colored sugars for Christmas. They are red and green beauties on a plate of cookies for the neighbors.

I bet these would be great as a thumbprint cookie with some raspberry jam in the print!

my son and i just made these together after dinner as our fun thing for the day. they were so easy! we doubled the recipe and got about 30 pretty big cookies. they are so yummy! most definitely buttery and the sugar coating is just enough sweetness. we might mix a bit of cinnamon in the next time around
thank you so very much for sharing.

My daughter and I made them last night. She said they looked like snowballs after rolling them in sugar. Very YUMMY. Best to pop in mouth while still warm. Definately best to not overbake.

YUM! I made these with my son(3) and his friend(4) this afternoon and they loved it. I made the dough and rolled it into balls before letting them dip the cookies into different color sugars for one half of the recipe and cinnamon and sugar for the other half. It was fun, and the cookies were good too. I have to agree with the other posters as well, they “melt in your mouth” best warm from the oven…oh so good! Thanks for sharing the recipe.

I love these cookies. We made them tonight. I used Pamela’s GF baking mix instead of flour. They turned out wonderfully! Love them!

I made these tonite and they were wonderful! I rolled them in sparkly colored sugar and they looked so festive. Thanks for sharing this recipe.

Great recipe! My only complaint is that I could very easily eat the ENTIRE BATCH!!!
Rolling them in sugar adds just the right amount of sweet! A simple and easy recipe – great for sharing with friends and neighbors on a whim!
