Description

Indulgence has a name and that name is Brownie Batter Chocolate Chip Cookies!

Ingredients

  • 4 Tablespoons Butter, Softened
  • ¼ cups Canola Oil
  • 1-⅔ cup Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 1-⅓ cup Flour, Plus 3 Tablespoons
  • ¾ cups Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1 pinch Salt
  • 1 cup Semi-Sweet Chocolate Chips

Preparation

In a large bowl, cream together the butter, oil, and sugar. Add the eggs and vanilla, and mix well. Add the dry ingredients and mix until just combined. Fold in the chocolate chips (you could add nuts too, if you like). Cover the dough with plastic wrap and refrigerate for at least 30 minutes, but an hour is preferable.

Spoon the mixture into 2-tablespoon-sized cookies and roll into a ball. Place on a sheet pan lined with parchment or a Silpat. Using the bottom of a glass, wet it and dip it in sugar, then gently press down on the cookies just until they are a little flat on top. Bake at 350ºF for 8–10 minutes. Let cool for 5 minutes and remove to a cooling rack.

Heather has a good idea! My husband and I both love the crunchy corners in the brownie pan. I discoverd this idea years ago: use the brownie batter for cookies! Lots of crispy edges! Yum. I don’t cool my batter, just scoop it out with a cookie scoop. Delish!
