Description

Full of spices, nuttiness from the brown butter, and sweetness from the apples—this cake has it all!

Ingredients

  • ⅓ cups Butter
  • ¼ cups Granulated Sugar Substitute
  • ¼ cups Pure Maple Syrup
  • 1 teaspoon Vanilla Extract
  • ¼ cups Unsweetened Applesauce
  • ½ cups Plain Greek Yogurt
  • 2  Eggs, Slightly Beaten
  • 1 cup Whole Wheat Flour
  • ½ cups White Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Allspice
  • ⅛ teaspoons Ginger
  • ¼ cups Water
  • 1 cup Finely Chopped Apples

Preparation

1. Preheat oven to 350ºF. Lightly spray an 8×8 baking dish with nonstick cooking spray.
2. In a small saucepan, melt butter over medium heat, stirring occasionally to prevent scorching. Continue cooking until butter turns light golden brown. Set aside to cool.
3. In the bowl of a stand mixer, beat together sugar substitute, maple syrup, vanilla, applesauce, yogurt, and eggs until creamy. Beat in cooled butter.
4. In a medium bowl, whisk together flours, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, and ginger. Slowly add dry ingredients to wet ingredients. Add water. Beat on low until well-combined.
5. Gently stir in chopped apples.
6. Spread batter into prepared baking dish. Bake for 20-30 minutes or until just starting to turn light golden brown and a toothpick inserted into the center comes out clean.
7. Allow to cool for 10 minutes before cutting. Store leftovers in an airtight container.
