Description

This is a classic recipe that my Mom always used to make us as an after school snack.

Ingredients

  • 2 cups Raisins
  • 1 cup Water
  • 1 teaspoon Baking Soda
  • 1 cup Butter, Softened
  • 2 cups Brown Sugar
  • 2 whole Eggs, Beaten
  • 1 teaspoon Vanilla
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons All Spice
  • 1-½ teaspoon Cinnamon
  • 4 cups All-purpose Flour
  • ½ teaspoons Salt

Preparation

Put the water and raisins in a small sauce pan. Set the pan over medium high heat and heat until the water starts to boil. Keep at a boil for 5 minutes. Do not let it boil dry! At the 5 minute point, remove from heat and stir in the 1 teaspoon of baking soda. Let the mixture cool a little.

In the bowl of a stand mixer cream the softened butter and brown sugar until light and fluffy. Add eggs one at a time. Add in the vanilla and spices.

Combine the flour and salt. Gradually add the flour mixture into the creamed mixture. Mixture will get very stiff and a little crumbly, don’t worry! Add in the raisin mixture, with any water that is left in the pot. Gently stir all together.

Drop by the heaping tablespoon onto a silpat lined baking mat.

Bake at 350 degrees F for 12 minutes. Cool on a rack.
