Description

Brownies with the perfect balance of fudgy and cakey texture and a subtle blueberry flavor. So good, you won’t even be able to tell they’re whole wheat.

Ingredients

  • 1 cup Blueberries, Fresh Or Frozen
  • 2 sticks Unsalted Butter
  • 1-½ cup Light Brown Sugar, Packed
  • ¾ cups Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • ½ Tablespoons Vanilla Extract
  • 2 whole Eggs
  • 1-½ cup Whole Wheat Flour

Preparation

- Preheat oven to 350 degrees F. Lightly grease a 9 x 9 baking dish with canola oil.
– Cook berries in a saucepan over medium heat for about ten minutes to break down and reduce berries to a slightly thicker (not syrupy) juice. Set aside and cool.
– Either on the stove top or in the microwave, slowly heat butter and sugar until most of the sugar is dissolved. Let cool for several minutes.
– Add blueberry mush to butter/sugar mixture and whisk to combine.
– Add cocoa powder, baking powder, salt and vanilla extract and stir well. Add eggs one at a time and stir well to completely incorporate. (Either a stand mixer or hand power can be used for this)
– Add whole wheat flour and mix until just combined, but very few lumps (if any) remain.
– Bake for 30 minutes, until a toothpick comes out clean and the top is puffed and split.

Just mixed these up with the kiddos. Can’t wait to try them. Only had about 1/3 c. of cocoa so I grated an ounce of baking chocolate and added instead. We’ll see how they turn out, but the batter was delicious!

These look so fudgy and delicious, which is rare when there is whole wheat flour involved! I actually have blueberries sitting in my fridge that would love to be slipped into this brownie batter!

Very nice cakey brownie, which baked evenly (unlike many brownies, which are crispy at the edges and soup in the middle). I can hardly taste the blueberry flavor, but I can tell the brownies contain whole wheat flour. It’s not a bad flavor, but there’s kind of a grittiness. I think next time I’ll use white whole wheat flour – still get the whole grain, but not the grit. I almost always use Hershey’s Special Dark cocoa powder for baking, and the combination of that and the blueberries in this recipe made them look like mud. Awesome! Thanks for sharing this creative twist on brownies!

A good cake like brownie – you cannot tell the flour is whole wheat and the blueberries are very subtle. I would add icing or a topping to them. They are not overly sweet as written so I wouldn’t reduce the sugar, but I may use dutch process cocoa next time to enhance the chocolate flavor.

They were good, mine were fudgy but I baked them for about 5 minutes less, you never know what you oven may be like. I also used less sugar as i normally do. I wish you could taste the blueberries more, if I tried this another time I might boil some time and add some extra in after.

These were really yummy! I added chocolate chips sprinkled on top, and served with vanilla ice cream and a hot blueberry compote served over all. It got great reviews from my family – thanks for the recipe!

Very tasty!!! I used splenda brown sugar and it worked great! Loved the subtle blueberry flavor. Great consistency. I cooked mine for the directed time but I used an 8X8 pan. Thanks for the great recipe. Will make again!
