Description

Brown sugar, oats and blueberries come together to make this bar that tastes just like a cinnamon-blueberry crumble.

Ingredients

  • ¾ cups Whole Wheat Pastry Flour (or All-purpose)
  • ¾ cups Brown Sugar
  • 1-½ cup Rolled Oats
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • ½ cups Butter Plus 2 Tablespoons, Divided
  • 1 teaspoon Vanilla Extract
  • 1 cup Blueberries

Preparation

Preheat oven to 350ºF.

In a large bowl, combine flour, sugar, oats, cinnamon and salt and mix until combined. Melt the 1/2 cup of butter and add it, along with the vanilla, to the oat mixture. Stir until moistened. This may take a minute or two! Fold in the blueberries—it’s okay if they pop a little bit.

Butter and flour an 8×8 baking pan. Press batter into the pan. Melt the remaining 2 tablespoons butter and drizzle it over the bars. Bake for 20 minutes, the let cool completely. This can take up to 45 minutes! Cut and serve. This can be kept in the fridge or at room temperature in a sealed container.

VERY tasty. Emphasis should be on the “crumble”. I couldn’t get mine to solidify – not really sure if they were supposed to be solid bars or not. Either way – delicious.

I made this last week, but I actually dropped about half of it all over the floor! It was probably a good thing because it was so delicious! I added chocolate chips and bran flakes, too. :) Great recipe.
