Description

My mother in law gave me this recipe because my husband loved it. Now we all love it!

Ingredients

  • FOR THE CAKE:
  • 2 whole Eggs
  • 1 cup Sugar
  • 2 Tablespoons Shortening
  • ¾ cups Milk
  • 1 teaspoon Vanilla
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 cups Flour
  • 2 cups Blueberries
  • _____
  • FOR THE TOPPING:
  • ½ cups Flour
  • ½ cups Sugar
  • 1 teaspoon Cinnamon
  • ½ sticks Butter, Not Melted

Preparation

1/21. Preheat oven to 350 degrees. Lightly grease a 9×13 pan.

2. In a large bowl, cream together sugar, eggs, and shortening.

3. Add the milk, vanilla, baking powder, and salt. Mix together until blended.

4. Mix in the flour and then gently stir in the blueberries.

5. Place immedietly in the greased pan.

6. Beat together all topping ingredients until crumbly.

7. Sprinkle over cake mix.

8. Bake at 350 degrees for 30 minutes.

Optional: serve warm with Cool Whip or ice cream on the side!

I made it as a (delicious) cake, but I bet it would be good as muffins, too. How do you think that would affect the cooking time?

Great breakfast cake! I switched in soy for the milk (lactose intolerant) and didn’t do the topping. It was a great alternative to muffins.

This was a very good coffee cake. I will definitely make it again, and it’s worthy of being served to guests. :o)

The cake part is moist, probably from all those berries! Most of the sweetness comes from the cinnamon-sugar crumbles on top.

It was an easy recipe to follow, although my cake was still runny in the middle after 30 minutes. It ended up taking 45 minutes at 350* for me.
