Description

Years ago, when my husband and I were first married, we owned a little coffee house. I loved baking for our restaurant and this carrot cake was a HUGE hit! It was the most requested dessert on our menu. One year I decided to see how my little cake would stand up to the expert bakers entered in to the local county fair. To my surprise, it won a blue ribbon! I hope you will enjoy it as much as we have over the years!

Ingredients

  • FOR THE CAKE:
  • 2 cups Flour
  • 1-½ cup Sugar
  • 2 teaspoons Baking Soda
  • 2 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 4 whole Eggs
  • 1 cup Oil
  • 4 cups Grated Carrots
  • _____
  • FOR THE FROSTING:
  • 1 package 8oz Cream Cheese
  • ½ cups Butter
  • 1 pound Powdered Sugar
  • 1 Tablespoon Milk

Preparation

Mix all the dry cake ingredients together. Beat eggs lightly and stir into the dry mixture along with the oil. Stir in carrots. Pour into greased and floured round cake pans. Bake at 350ºF for 45–60 minutes.

Helpful hint: if you do not like big pieces of carrot in your cake, mix the cake in your food processor with the chopping blade. It purees the carrots and makes for a very moist cake.

Blend together cream cheese and butter. Stir in powdered sugar and just enough milk to make frosting smooth. Frost over cooled cake.

I did not puree the carrots, because I do like carrot bits in my carrot cake. I just finely chopped them. I wasn’t sure if the 4 cups of carrot were for shredded…So I used a bit more then 4 cups shredded but less then 4 cups of the finely chopped. I didn’t find the cake exceptionally moist (maybe because I didn’t puree them?), but as moist as I would expect your typical carrot cake to be. I added lots of nuts (over a cup) and that was a delicious choice.

This is my new favorite carrot cake recipe! My husband had doubts because I had made some good carrot cakes in the past, but once he tried it, he asked me to make it again! He even admitted he was wrong! I ended up just pureeing the carrots, not the mix and I did as a double layer cake. Doesn’t really specify in the recipe but this worked out and tasted delicious! Thanks!

This is my favorite cake of all time! I love the way the carrots are pureed so there aren’t big chucks of carrot. It makes it really moist and so delicious!
