My hubby says I have a thing for blondies. After bars, it was just a matter of time for me to come up with cookies.
Enjoy the blondie flavors and texture in the form of a cookie: chewy on the inside, slightly crispy edges, delicious butterscotch flavor.
Yeah, I have a thing for blondies.
In a medium mixing bowl, whisk together the dry ingredients (flour, baking powder, salt).
In a large mixing bowl, stir in butter and sugar together until smooth. Add the egg and vanilla. Stir again.
Slowly add the dry mix. Stir until all is combined. It should be thick enough to scoop out with a spoon or a cookie scoop. You can chill the dough until firm.
Bake at 350ºF for 10-13 minutes, until golden brown. Cool for 2 minutes on the sheet and than transfer to a wire cooling rack.
