Description

New York Style Cheesecake with a chocolate crust.

Ingredients

  • 2 cups Chocolate Cookie Wafers
  • 1 stick Butter, Melted
  • 3 packages Cream Cheese (8 Oz. Softened)
  • 1 cup Sugar
  • 3 whole Eggs At Room Temperature
  • 1 cup Sour Cream
  • 1 teaspoon Pure Vanilla Extract
  • ½ teaspoons Almond Extract
  • 1 carton Fresh Raspberries
  • 1 cup Semi-Sweet Chocolate Chips
  • 2 Tablespoons Butter

Preparation

Preheat oven to 350 degrees

1) For crust: you will need a spring form pan that has been sprayed with cooking release (Pam).

2) Crush chocolate wafers in food processor until fine.

3) Melt 1 stick butter and add to crushed wafer cookies. Mix together and pat to bottom of the spring form pan.

Place in refrigerator while mixing filling.

4)For Filling: In mixer, beat cream cheese until smooth. Add sugar and continue to beat for 1 minute

5) Add one egg at a time,beating until incorporated before adding the next egg.

6) Add sour cream,vanilla extract and almond extract. Beat until incorporated,about 2 minutes.

7)Pour filling into prepared spring form pan.

8) Bake in a preheated 350 degree oven for 45 minutes or until set.

9) Remove from oven and cool for 30 minutes before placing in refrigerator to continue cooling. Cheesecake should cool at least 2 hours before serving.

10) For Chocolate Sauce: melt chocolate chips and butter gently in a microwavable dish for 45 seconds. Stir until smooth and butter and chips are melted.

11) Garnish each slice with a spoonful of chocolate sauce and fresh raspberries.
