Description

Moist yet light, this banana bread is a crowd pleaser. Makes 1 13″x9″ cake or 2 large loaves.

Ingredients

  • 3 cups Flour, All Purpose
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 1 pinch Salt
  • 2 cups Sugar, Divided
  • 1 cup Butter
  • 2 whole Eggs
  • 3 cups Bananas, Mashed
  • 1 teaspoon Vanilla
  • 1 cup Yogurt
  • 2 cups Chocolate Chips Or Walnuts
  • 2 Tablespoons Ground Cinnamon
  • ½ cups Dark Brown Sugar

Preparation

Preheat oven to 350 degrees F.

Sift together flour, baking soda, baking powder, salt and 1/2 cup of sugar.

In a separate bowl, cream together the butter and remaining 1 1/2 cups sugar till fluffy. Add eggs one at a time and beat well. Add mashed bananas, vanilla and yogurt one at a time, beating well after each addition.
Stir in the flour mixture.

To prepare the topping, mix together the chocolate chips/walnuts, cinnamon, and dark brown sugar.

Pour in half the batter into a greased pan. Top with half the topping. Pour in remaining batter and finish with the rest of the topping.

Bake for 60-75 minutes. Cake is done when a skewer inserted in the center comes out clean.

Have two loaves in the oven right now! I use silicon bread pans and ended up with extra batter… sooo…. I made two pans of mini-muffins too!

I tried this receipe last night and regretfully I undercooked it. The toothpick came out clean and the time was about right. However, I refused to admit defeat and I ate around the undercooked spot (it literally fell apart taking it out of the pan, so it did that work for me). Very yummy. The sweet top layer and the chocolate really sealed the deal. I am going to try this receipe again and will let it cook longer.
