Berry Meringue Nests

Description

A quintessentially English summer dessert. It’s a snap to make and looks special and festive. You can make it in advance and assemble it just before serving so there’s no last minute panic! This will make a very special end to any meal.

Ingredients

  • 8 whole Egg Whites
  • 16 ounces, weight Sugar
  • 3 pints Mixed Berries (I Recommend Strawberries, Blueberries And Raspberries)
  • 1 Tablespoon Sugar
  • 1 Tablespoon Lemon Juice
  • 8 ounces, fluid Heavy Cream

Preparation

Heat the oven to 250F.

Make sure your equipment is squeaky clean!

Whisk the egg whites in a bowl with the whisk attachment until you have soft peaks.

Carry on whisking adding the sugar one tablespoon at a time. The mixture will become very shiny.

Line two large baking sheets with parchment paper and spoon out the nests, about 1 1/2 – 2 tablespoons of mixture per nest.

Make an indentation on the top of each nest (where the cream and berries will sit).

Place the baking sheets in the oven for an hour. Check the meringue, if they are dry on the bottom they are cooked, if not, bake for another half hour, checking every 15 minutes.

When ready, take pans out of the oven and allow nests to cool completely.

To prepare the fruit, hull the strawberries and cut into quarters. In a large bowl mix the strawberries, blueberries and raspberries. Add the tablespoon of sugar and lemon juice and let the mixture sit.

Whisk the cream to soft peaks.

To serve, fill the nests with cream and top with berries.
