Moist, nutty pumpkin cookies.
Preheat oven to 350ºF.
Cream butter and sugar until fluffy in a standup mixer with a paddle attachment. Add pumpkin, egg and vanilla and mix well.
Whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add in batches to the pumpkin mixture. Remove bowl from mixer and stir in raisins and nuts.
Drop by teaspoonfuls onto Silpat or parchment paper-lined cookie sheets about 2 inches apart. Push the cookie down slightly with your fingers.
Bake for 16-20 minutes or until golden. Cool on a cooling rack.

I used to have a recipe that I used for pumpkin cookies & lost it. The last time I made a random pumpkin cookie recipe it did not turn out to my taste. This was just what I was looking for. Thank you. I did add mini chocolat chips instead of raisens.
