Description

Bananas foster is a dessert that is typically served to you on fire. What fun!

This version is a little bit more tame. The angel food cake makes this lighter than a typical bread pudding, but with the flavor of bananas foster.

Ingredients

  • 10 ounces, weight Prepared Angel Food Cake, Homemade Or Store-bought
  • 2-¼ cups Skim Milk
  • 3 whole Eggs
  • ¼ cups Brown Sugar, Packed
  • 4 ounces, fluid Spiced Rum
  • 2 teaspoons Pure Vanilla Extract
  • 3 whole Medium Bananas, Sliced 1/2 Inch Thick
  • ¼ cups Confectioners Sugar (optional As Garnish)

Preparation

1. Heat oven to 350°F. Spread out angel food cake cubes on a large rimmed baking sheet. Bake 20 minutes, tossing three times, until lightly toasted and dry.

2. Whisk milk, eggs, sugar, rum and vanilla in a large bowl until sugar is dissolved. Gently stir in cake cubes and banana slices; pour into an 8-inch square baking dish. Cover dish with foil. Let stand 30 minutes at room temperature for cake cubes to absorb most of the milk mixture.

3. Bake, covered, 30 minutes at 350 degrees. Remove foil; continue to bake 25 minutes.

4. Let stand 15 minutes. Dust top with confectioner’s sugar (as desired)

OHHMYYY!!!!! This sounds as easy as most bread puddings but much more dressy!! Can’t wait to try it!!

Yum! Made this last night for friends and we all really enjoyed it. The angel food cake substitution took away a lot of the heaviness of bread pudding without compromising the integrity of the dessert. Thanks for sharing!
