Description

Banana Snack Cake is one of my families’ favorites and this is a quick and easy version. The addition of cream cheese in this recipe makes it especially moist along with the ever popular cream cheese icing.

Ingredients

  • FOR THE CAKE:
  • 4 ounces, weight Cream Cheese, Softened
  • ¼ cups Butter, Softened
  • 1 whole Large Egg
  • ½ cups Sugar
  • ⅛ cups Sugar
  • 2 whole Medium Peeled Mashed Bananas
  • ½ teaspoons Vanilla
  • 1-⅛ cup All-purpose Flour
  • ¾ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda

  • FOR THE ICING:
  • 3 Tablespoons Butter, Softened
  • 3 ounces, weight Cream Cheese, Softened
  • ¼ teaspoons Vanilla
  • 3 cups Powdered Sugar
  • ⅓ cups Chopped Pecans

Preparation

Beat 4 ounces of cream cheese and 1/4 cup butter until creamy. Beat in egg and 1/2 plus 1/8 cup sugar. Add bananas and vanilla. Mix well.

In a seperate bowl mix together flour, baking powder and baking soda. Slowly add dry mixture to creamed mixture – make sure it is well blended.

Spread into a greased 8 X 8 pan. Bake at 350 degrees F for 30 minutes.

Meanwhile, make icing by creaming together the butter and cream cheese. Mix in vanilla and powdered sugar. Stir in nuts. Spread onto cooled cake.

I was surprised there was no salt in the cake, but it turned out well. It was dense with a strong banana flavor. I agree with preview reviewer that it made more icing than needed (but I don’t like a lot of icing). I had to add a dash of milk to frosting because it was too thick and my mixer stalled out.
