Description

If Elvis had a favorite cupcake, this would be it.

Ingredients

  • 1-½ cup Sugar
  • 1 stick Butter (unsalted And Softened)
  • 2 whole Eggs
  • 1-½ teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • ¼ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Buttermilk, Or Vinegar Soured Milk
  • 1-¼ cup Mashed Ripe Banana

  • FOR THE FROSTING:
  • 2 cups Powdered Sugar
  • 1 stick Butter (unsalted And Softened)
  • 1 teaspoon Vanilla Extract
  • 1 cup Creamy Peanut Butter
  • 3 Tablespoons Milk

Preparation

1. Preheat oven to 350 degrees Fahrenheit and line a cupcake pan with wrappers.

2. Cream butter and sugar together until fluffy.

3. Add eggs and vanilla. Mix until smooth.

4. In a separate bowl, combine all the dry ingredients.

5. Alternate adding the dry ingredients and buttermilk into the egg and butter mixture and mix until well combined.

6. Gently fold mashed bananas into the batter.

7. Scoop batter into the muffin cups until almost full.

8. Bake for 25 minutes and then let cool.

To make the frosting:

1. Combine powdered sugar, butter, vanilla, peanut butter and milk.

2. Mix until spreadable and frost cooled cupcakes.

Eat while dancing around and singing your favorite Elvis song.

These are not only delicious but easy to make! I have made these twice now and they turn out moist and almost like sponge cake. Now when I have leftover ripe bananas I have a good alternative to banana bread. The frosting recipe makes more than I use on the cupcakes so I’m making brownies tonight and using the leftover frosting on them.

These were delicious; the frosting tasted just like a type of pinwheel candy my mom used to make when I was a kid. Awesome and I will definitely make this again.

tasted very good. however, they were very flat—is the baking powder and baking soda amount correct? I made 1/2 recipe of icing and it was PLENTY (21 cupcakes).

I made only the cupcakes (with a caramel frosting – yummy)! These were dee-li-cious! Everyone at work thought so too! So moist and soft and just a little bit dense – this will be a permanent rotation in my cupcake arsenal. Thanks for the great recipe!
