Description

Family favorite pie, my grandmother’s recipe. Really good and filling is great for cream puffs. I cook it in the microwave so it doesn’t burn.

Ingredients

  • FOR THE CUSTARD:
  • ⅔ cups Sugar
  • 3 Tablespoons Cornstarch
  • 1 pinch Salt
  • 3 cups Milk
  • 4 whole Egg Yolks, Beaten
  • 2 Tablespoons Butter
  • 1 teaspoon Vanilla
  • FOR THE PIE:
  • 1-½ whole Bananas
  • 1 whole Pie Crust (Regular Or Graham Crust)
  • 4 whole Egg Whites
  • ½ teaspoons Cream Of Tartar
  • 3 Tablespoons Sugar

Preparation

For the custard:
Mix sugar, cornstarch, salt and milk in a microwave-safe bowl. Make sure it can contain the mixture when it boils. Cook for approximately 6 minutes in microwave until mixture boils. Boil for 1 minute. Remove from microwave. Add a portion of hot mixture slowly to beaten egg yolks. Add mixture back to bowl. Boil in microwave for 2 minutes. Remove and add butter. Let cool before adding vanilla.

For the pie:
Cut half of the banana onto bottom of either a regular or graham crust. Layer a portion of custard on crust. Cut remaining banana onto filling. Add remaining filling.

Beat egg whites and cream of tartar until stiff. Slowly beat in sugar until fluffy. Spread on top of pie, making sure it touches the crust. Bake at 350º until brown. Let cool before serving.

This is a favorite with family and friends. The custard is also a great filling for cream puffs.
