Description

A simple banana carrot cake that omits all the oil.

Ingredients

  • 2 whole Large Ripe Bananas, Mashed
  • ⅓ cups Sugar
  • ¾ cups Unsweetened Natural Applesauce
  • 2 whole Eggs
  • 1 cup Flour (you Can Use Whole Wheat Or All-purpose)
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1-½ teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ¼ teaspoons Cloves
  • 1-½ cup Uncooked Quick Oats
  • 1 cup Shredded Carrot
  • ¼ cups Chocolate Chips
  • FOR THE GLAZE (optional):
  • ¼ cups Light Cream Cheese
  • 2 Tablespoons Milk
  • ⅔ cups Powdered Sugar

Preparation

Preheat oven to 350ºF.

In the bowl of a stand mixer, mix together bananas, sugar, and applesauce, about 1 minute. Mix in eggs, one at a time. Once combined, add in all flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves. Mix until batter is smooth.

Stir in oats, shredded carrots, and chocolate chips.

Pour batter into a greased 8×8 pyrex dish. Bake for 35 minutes.

Prepare glaze by whisking cream cheese, milk, and powdered sugar. Add additional sugar if you would like it thicker, or additional milk if you would like a runny glaze. Pour it over the warm cake.
