Description

This cake sounds fancy, but couldn’t be simpler. Or more delicious!

Ingredients

  • FOR THE CAKE:
  • 1-½ cup All-purpose Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ¼ teaspoons Cinnamon
  • ⅛ teaspoons Nutmeg
  • 1 cup Granulated Sugar
  • ¼ cups Canola Or Vegetable Oil
  • ¼ cups Plain Applesauce (unsweetened Kind)
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2 whole Very Ripe Bananas, Mashed
  • FOR THE FROSTING:
  • ¼ cups Butter
  • ½ teaspoons Vanilla Extract
  • 1 cup Powdered Sugar
  • 1 Tablespoon Heavy Cream
  • ¼ cups Chopped Walnuts For Garnish (optional)

Preparation

Preheat oven to 325ºF. Spray an 8×8 square dish with nonstick cooking spray and set aside.

In a large bowl, combine all the dry ingredients, excluding the sugar. Stir to combine and set aside.

In a different bowl, whip sugar, oil and applesauce together. Stir in eggs, vanilla and mashed banana. Slowly incorporate the dry ingredients into the wet until just combined. Pour into prepared dish and bake 25-30 minutes or until a toothpick comes out clean when inserted. Cool completely.

To make the frosting, place butter in a small saucepan over medium heat. Just after the butter melts, start swirling the pan in small circles. After about 30 seconds or so, the butter should start foaming and will turn an amber color and smell nutty. Once this happens, remove from heat immediately and pour into a different container. Cool to room temperature.

Once butter has cooled, whip together with vanilla, powdered sugar and cream until smooth and creamy. Spread over cooled cake and top with chopped walnuts, if desired. Store in an airtight container until ready to serve.

Delicious! I made it as written – including browning the butter. That was my first time to brown butter – it is completely worth it for the icing flavor!

I thought since it was a cake it would be lighter, but the consistency was similar to banana bread. The taste was great!

Everyone in my family loved this cake. In fact it was so loved much I honestly didn’t get a piece. I managed to snag a single bite. I will definitely be making this again and also may try foodvangelist’s suggestion.

A great banana cake with wonderful banana flavor. I made as directed, but would consider foodvangelist’s suggestions for next time just to try.

Very delicious cake!! Extremely moist!! I substituted brown sugar for the white sugar and added 1/4 tsp maple extract to the frosting. I highly recommend making this cake!!
