Description

An easy homemade banana cake with peanut butter frosting. A tasty moist cake that is a family favorite!!

Ingredients

  • ½ cups Butter, Softened (1 Stick)
  • 1-½ cup Sugar
  • 2 whole Eggs
  • 1 cup Mashed Riped Bananas (2 To 4 Medium-sized Bananas)
  • 1 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Cinnamon
  • ½ cups Milk
  • ½ cups Walnuts, Chopped (optional)
  • FOR FROSTING:
  • ⅓ cups Creamy Peanut Butter
  • ⅓ cups Milk
  • 1-½ teaspoon Vanilla Extract
  • 3 cups Confectioners Powder Sugar
  • ½ cups Walnuts, Chopped (optional)

Preparation

In a large bowl, cream the butter and sugar together until fluffy. Add eggs and mix well. Beat in bananas and vanilla; mix well. Combine the flour, baking powder, baking soda and cinnamon; add the dry ingredients to the cream mixture, alternating with the milk and beating well. Add chopped walnuts (if you like) to the batter.

Place in a 13×9 greased baking pan. Bake at 350 F for 30 to 35 minutes, until a toothpick or cake tester inserted into the center comes out clean. Cool the cake on a wire rack.

For the frosting, in a small bowl, beat peanut butter, milk and vanilla until well blended. Gradually beat in confectioners sugar until the frosting is smooth. Spread over the cooled cake and add the chopped walnuts, if using.
