Description

This delicious cake will have your guests asking for the recipe. The pineapple and bananas make the cake moist, and who doesn’t love cream cheese frosting?

Ingredients

  • 3 cups Flour
  • 2 cups Sugar
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 3 whole Eggs
  • 1-½ cup Vegetable Oil
  • 8 ounces, weight Canned Crushed Pineapple, undrained
  • 2 cups Ripe Bananas, Mashed

  • FOR THE FROSTING:
  • 16 ounces, weight Cream Cheese
  • 1 stick Butter, Softened
  • 1 teaspoon Vanilla
  • 2-½ cups Powdered Sugar
  • 2 cups Pecans, Chopped

Preparation

Preheat oven to 325 degrees.

Mix flour, sugar, cinnamon, baking soda, and salt in a large bowl. In a separate bowl, beat eggs and oil and blend into the dry ingredients. Add undrained pineapple and mashed bananas and stir to combine.

Pour batter into two greased and floured 9 inch cake pans. Bake for 40-45 minutes or until done.

Place pans on a cooling rack to cool for 10 minutes before turning out cakes onto a rack to cool completely.

For frosting, beat softened cream cheese with softened butter. Beat in vanilla and slowly add powdered sugar. Beat until well combined.

Frost the cake and press chopped pecans into the side of the cake.
