Description

Haystack cookies with a sugar cookie “babe” to celebrate Christmas. Fun to make with your children for Advent.

Ingredients

  • 1 package (about 16 Oz. Package) Sugar Cookie Dough
  • 3 cups Butterscotch Chips
  • 1-½ cup Creamy Peanut Butter
  • 1-½ cup Salted Peanuts
  • 6 cups Chow Mein Noodles

Preparation

Cut small slices of sugar cookie dough about 1/8 inch and roll to 1/2 x 1-1/2 inch. If you make them too large, the “babe” will become a “toddler” and be too big for the manger. Follow package directions for baking. (See note below.)

Place chips and peanut butter in a 2-quart bowl. Cover with plastic wrap. Microwave on half power for 3-5 minutes. Stir to combine. Mix in peanuts and chow mein noodles with two forks. Drop by forkfuls onto waxed paper, leaving a small indentation in the middle for the “babe.” Place one sugar cookie “babe” in each “haystack.” Allow to cool, preferably overnight.

Makes 6 dozen.

Note: you may also omit the sugar cookies and use small marshmallows for the “babe” if desired.
