Description

A tasty cream pie with an extra creamy texture from a special ingredient—avocados!

Ingredients

  • FOR THE CRUST:
  • 1-½ cup Crushed Graham Crackers
  • 1 whole Lime, Juiced (reserve The Lime For Zesting)
  • 4 Tablespoons Melted Butter
  • FOR THE FILLING:
  • 2 whole Avocados
  • 1-½ cup Sour Cream
  • 1 whole Egg
  • 1 teaspoon Zest From Lime
  • ¾ cups Sugar
  • ¼ teaspoons Salt
  • 3 Tablespoons All-purpose Flour

Preparation

Zest your lime and set zest to the side for later use.

Make your pie crust by mixing together the crushed graham crackers, lime juice, and melted butter in a small bowl. Then press the mixture into your pie pan. Form into a crust along the bottom and up the sides of your pan. Place into the refrigerator while you make the pie mixture—this will allow the crust to set up.

Peel and dice avocados. Add them to a mixing bowl along with the sour cream and egg. Mix using a hand mixer on a medium speed setting until smooth. Add the lime zest, sugar, salt and flour to your mixture. Mix again until well combined and completely smooth.

Pour mixture into your pie crust and chill for 1 hour in the refrigerator. Towards the end of the chill time, preheat your oven to 400 F.

Put the chilled pie into the preheated oven and bake at 400 F for 10 minutes then lower temperature to 325 F and bake for another 20 minutes.

Remove pie from the oven and allow it to cool completely and set up before serving. Top with whipped cream if desired! Enjoy.
