Description

Avocado what? Yup. Avocado Cookies. Half the fat as regular cookies, and soooooo incredibly soft. I see big things for this cookie’s future!

Ingredients

  • ½ cups Avocado
  • ½ cups Butter, Softened
  • ¾ cups White Sugar
  • ¾ cups Brown Sugar, Packed
  • 2 whole Eggs
  • 2 teaspoons Vanilla
  • 2-¼ cups Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ⅓ cups Pecans, Chopped
  • 8 ounces, weight Chocolate Chips

Preparation

Cream together avocado, butter, and sugars. Add eggs and vanilla, one at a time, mixing well after each addition. Then add flour, salt, baking powder and soda, adding one cup at a time. Then add nuts and chocolate chips. You can also add oats, coconut, shoelaces, whatever you’re feelin’!

Roll spoonfuls of dough into balls and flatten slightly. Bake at 350ºF for 11-13 minutes until golden and gorgeous.

I love recipes with unusual ingredients and this one was fun to make. I used a mix of chocolate chips, cinnamon chips and walnuts.

The cookie dough was wetter than I expected so I didn’t roll them or flatten them. I just plopped generous cookie scoops on to the baking sheet and they came out perfect. The color of the dough was a little off-putting but they came out of the oven looking like innocent, normal cookies. The softness was unbelievable.

I had a lot of fun telling people they were made with avocado!
