Description

The moist, cake-like cookies remind me of my childhood. Mom used to make huge batches of these and they never lasted long around the 4 of us kids and all of our friends. They are best made with homemade applesauce.

Ingredients

  • 1 cup Shortening
  • ½ cups Sugar
  • ½ cups Brown Sugar
  • 2 whole Eggs
  • 1 cup Unsweetened Applesauce
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 2 teaspoons Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 cups Oatmeal
  • 1 cup Chocolate Chips

Preparation

Cream together shortening and sugars, add eggs, applesauce and vanilla. (Mixture may appear a little curdled at this point but it will be fine.)

Sift dry ingredients together, mix into batter. Add oatmeal and chocolate chips.

Drop by teaspoonfuls onto greased baking sheets. Bake at 350º for 12 minutes or until lightly browned.

NOTES : Makes about 4 dozen cookies.

I made these cookies today and they are wonderful. I can not use chocolate since my husband is allergic to it. So I put raisins instead of chocolate chips. I also added 1 cup of chopped pecans and 1/4 t ground cloves. They are very moist with the applesauce. I wish they could be listed under oatmeal raisin.
I used parchament paper on the cookie sheets instead of greasing it and sure makes easy clean up.
