Description

This is a great summer dessert that is even better made into shortcake with biscuits and whipped cream.

Ingredients

  • FOR THE FRUIT:
  • 5 cups Apples, sliced
  • 3 cups Rhubarb, Sliced
  • 1-½ cup Sugar
  • 2 teaspoons Cinnamon
  • 4 Tablespoons Flour
  • 4 Tablespoons Butter
  • FOR THE TOPPING:
  • ½ cups Oats
  • ½ cups Brown Sugar
  • 4 Tablespoons Butter
  • 4 Tablespoons Flour

Preparation

Preheat oven to 350°F.

For the fruit, mix apples, rhubarb, sugar, cinnamon and flour; mix together. Turn out into a 9 x 13 baking dish and dot with the butter.

Mix the crumble topping together by mixing the topping ingredients and spread onto the top of the fruit. Bake for 30-35 minutes until bubbly and golden brown.

As this is one of my favorite desserts I was bound to like it, which I did. I doubled the topping so it was more to my taste but this made it so it needed to be baked longer. I really liked it but thought there was far too much sugar in it (especially doubling the topping). Very easy to make, though.
