Preheat oven to 350 F. Line two baking sheets with parchment paper; set them aside.
In a large bowl add egg, pumpkin, vanilla and brown sugar and mix until combined. Add flour, baking soda, salt, oats, cinnamon and nutmeg; mix until combined. Fold in apples and raisins.
Drop cookie-sized scoops of batter onto prepared baking sheets, about 1″ apart. Flatten the dough a bit if you like. How you shape them is how they will stay. Bake for 10–12 minutes or until lightly brown.
When done remove the cookie sheets from the oven and transfer cookies to a wire rack to cool.
Optional glaze: In a small bowl mix powdered sugar with maple extract and a splash of milk to get the consistency you want. Drizzle onto the cooled cookies.
