Description

Caramelized apples, warmly spiced yogurt, and granola comprise this special breakfast that is perfect for autumn.

Ingredients

  • 1 whole Medium Apple
  • 2 teaspoons Butter
  • 2 teaspoons Brown Sugar
  • 1 teaspoon Apple Pie Spice, Divided
  • ¼ cups Apple Cider
  • ½ cups Plain Greek Yogurt
  • ¼ cups Unsweetened Applesauce
  • ¼ cups Granola

Preparation

Core the apple and chop into 1/2-inch pieces (you may also peel the apple, if you so choose).

Heat butter in a medium skillet over medium-high heat. Add in the apple chunks and brown sugar, and cook until slightly softened, about 5 minutes, stirring occasionally.

Sprinkle apple chunks with 1/2 teaspoon apple pie spice; stir. Pour in apple cider, reduce heat to low, and simmer until apples are soft and cider has reduced, about 5 minutes, stirring often. Remove apples from heat and let cool.

In a small bowl, stir together the yogurt, applesauce, and remaining 1/2 teaspoon apple pie spice.

Set out a glass. Spoon in a bit of the yogurt-applesauce mixture into the glass, followed by some of the granola and a few spoonfuls of the apples. Repeat layers until the glass is full.

These are AWESOME!!!! I had to use Kashi cereal because someone who shall remain nameless (okay, it was me) ate all the granola. Still – wonderful! Thanks!!! I will be re-posting on Facebook.
