Apple Peanut Butter Snack Bars

Description

Mashed cinnamon apples and peanut butter granola bars take the place of my favorite childhood snack.

Ingredients

  • 2 cups Rolled Oats
  • ¼ cups Whole Wheat Pastry Flour
  • 1 Tablespoon Cinnamon, Divided
  • ¼ teaspoons Sea Salt
  • ¼ teaspoons Baking Powder
  • 2 whole Medium Apples, Peeled And Chopped (or 1/3-1/2 Cup Chunky Applesauce)
  • ½ cups Melted Peanut Butter
  • 1 teaspoon Vanilla Extract
  • ⅓ cups Honey, Plus A Little More If Needed

Preparation

In a large bowl, combine oats, flour, half of the cinnamon, salt and baking powder; mix.

To soften apples, mix them with the remaining cinnamon and microwave for 2-3 minutes, or pan roast on medium heat for 10 minutes. Once apples are soft, mash them with a fork making sure to leave some large chunks. Add apples into the oat mix.

Melt peanut butter (just a bit, in the microwave) and then stir vanilla into peanut butter. Add peanut butter to apples and oats.

Mix with a wooden spoon until all ingredients are moistened. You can even work the dough with your hands to get it all together. Add honey one tablespoon at a time, mixing until everything is combined. Mix with your hands before adding additional honey, but add it one tablespoon at a time if needed to reach the desired consistency. You want the dough to be sticky, but not too wet.

Spray a springform pan or pie plate with non-stick spray and pour in the oat dough. Spread it evenly in the pan. Bake at 350F for 18-20 minutes. Let cool for 15 minutes before cutting. Slice it into wedges, just like a pie.

Wow, these were delicious. My first attempt at making granola bars. I loved the unconventional shape, and th combo of peanut butter, apple and cinnamon.
