Description

A delicious vanilla cake with apples, cinnamon, and a crumb topping.

Ingredients

  • FOR THE CRUMB TOPPING:
  • 5 Tablespoons Butter
  • ½ cups Sugar
  • ½ cups Flour
  • ¼ teaspoons Salt
  • ½ cups Walnuts, Chopped
  • FOR THE CAKE:
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Cinnamon
  • 8 Tablespoons Butter
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • ½ cups Yogurt
  • 1 whole Apple, Peeled, Cored And Diced

Preparation

For the crumb topping:
Mix together butter, sugar, flour, and salt with a pastry blender or a fork till you get a crumbly mixture. Mix in the chopped walnuts and refrigerate till required.

For the cake:
Preheat the oven to 180ºC (about 355ºF). Grease and line the bottom and sides of an 8″ round or a square pan.

Sift together flour, baking powder, baking soda, salt and cinnamon powder. Reserve.

Beat the butter and sugar on medium speed until light, about 3 minutes. Mix in the eggs one by one, beating for about 1 minute after each addition, followed by vanilla.

Add the flour and yogurt alternately, beginning and ending with flour. Beat till you get a smooth batter. Batter will be thick. Mix in the diced apples.

Transfer the batter into the prepared pan and even out the top using a spatula. Sprinkle over the crumb topping evenly.

Bake for 50-60 minutes or till the crumbs are golden and a toothpick inserted into the cake comes out clean.

Serve plain or with some whipped cream or custard on the side.

Really great. The crumb stayed really loose and is therefore much easier to eat if you have a plate…. I did not have that…

This was very good…next time I will use a 9 inch pan so the middle cooks through.
