Preheat your oven to 350ºF.
For the filling, core and dice apples. In a small bowl, add diced apples, sugar, lemon juice, vanilla, cinnamon, nutmeg, and ginger, mix well.
In a food processor or blender, add ingredients for the topping. Make sure to cut the cold butter up, it helps with the mixing.
Into 2 ramekins, evenly divide filling and top with equal amounts of crumble. Bake for 30 minutes.
