Description

These delicious cookies are a new favorite. The recipe was passed down to me from a dear friend. While I usually just use apple, the raisins and walnuts are a nice addition when I have them on hand!

Ingredients

  • FOR THE COOKIES:
  • ½ cups Shortening
  • 1-⅓ cup Packed Light Brown Sugar
  • 1 whole Egg
  • ½ cups Milk
  • 2 cups All-purpose Flour, Divided
  • 1 teaspoon Baking Soda, Divided
  • ½ teaspoons Salt, Divided
  • 1-½ cup Chopped Apples
  • ½ cups Chopped Walnuts (optional)
  • ½ cups Raisins (optional)
  • FOR THE VANILLA GLAZE:
  • 1 cup Powdered (Confectioners) Sugar
  • 1 Tablespoon Butter, Melted
  • ¼ teaspoons Vanilla Extract
  • ⅛ teaspoons Salt
  • 2 teaspoons Milk

Preparation

Preheat oven to 400 degrees F and grease a large cookie sheet.

In a large bowl, mix the shortening, light brown sugar, and egg.
Next, add in 1/2 cup of milk. Combine the flour, baking soda and salt in another bowl. Then add half the dry ingredients into the creamed mixture; blend well. Add the apples, nuts, and raisins and the remaining dry ingredients and blend once again until it is a thick creamy consistency.

Drop onto the greased cookie sheet and bake for 12 minutes. This recipe will yield about 24 cookies.

Once cookies have cooled, mix together powdered sugar, melted butter, vanilla extract, salt, and milk in a small bowl. Drizzle the vanilla glaze over the cookies and enjoy!

It does depend on the taster – I’m a huge fan of soft cookies! (:

I’m only giving it 3 mitts because I didn’t like how mushy they came out. I had gotten my sister in law to taste one and she said she liked it because it was in between a cake and a cookie. So I guess it depends on the taster.
