Description

These “faux cupcakes” are as fun to make as they are to eat.

Ingredients

  • FOR THE FILLING AND APPLE CUPS:
  • 1 cup Plain Yogurt
  • 6 Tablespoons Shredded Sweetened Coconut
  • 3 Tablespoons Dried Cranberries
  • 2 whole Red Delicious Apples (Or Your Favorite Type Of Apple)
  • 1 whole Lime
  • FOR THE TOPPINGS:
  • 4 Tablespoons Shredded Sweetened Coconut
  • 4 dashes Ground Cinnamon
  • 4 Tablespoons Granola
  • 3 Tablespoons Walnut Pieces
  • 4 Tablespoons Maple Syrup

Preparation

For the filling:

In a medium size bowl, add the yogurt, 6 tablespoons of shredded coconut and the dried cranberries. Mix together, cover with plastic wrap and put it in the refrigerator while preparing the apples.

For the apple cups:

Cut the apples in half width-wise.

Using a small spoon (or a ¼ teaspoon), scoop out the core and seeds.

Scoop out a section of the insides of the apple that’s a bit larger than the diameter of the core (about two inches diameter).

Cut the lime in quarters, and squeeze the juice from each piece of lime over the flesh and center of each apple.

Stir the yogurt filling again and add it into the cavity of each apple.

Also add the filling to the top of the apple so it resembles frosting on a cupcake.

Sprinkle the remaining 4 tablespoons of shredded coconut on top of the yogurt filling. Then sprinkle the cinnamon on top.

Next, top with the granola and the walnut pieces.

Just before serving, drizzle the maple syrup on top.
